Holi Special: Mouthwatering Pani Puri

Though we all love to have those fluffy little mouthwatering Pani Puri or as we all know it better, Gol Gappa all the time, but having them on the occasion of Holi, the festival of colors, makes them even more special and delicious!

Pani Puri adds a tingly spicy taste to the festival, so if you want your Holi to be spicy and colorful too, learn to make these yummy flour balls at home with this easy to make recipe.
Preparation Time: 20 Minutes
Cooking Time: 15 Minutes
Serves: 4

Ingredients: *Measuring cup used, 1 cup = 250 ml
• 30 puris (either buy them from the market or make them at home)
• 1 small bowl of Tamarind Chutney

For Stuffing:
• 2-3 medium Potatoes (Aloo)
• 1 medium chopped Onion
• 1-1 ½ tablespoon chopped Coriander Leaves
• 1 teaspoon roasted Cumin powder
• 1 teaspoon Chaat Masala
• Black Salt as per the requirement
• ¼ teaspoon Red Chili Powder (optional)

For the Pani:
• ½ cup chopped Mint Leaves
• ¾ cup chopped Coriander leaves
• 1 inch chopped Ginger
• 1 chopped Green Chili
• 1 tablespoon tightly packed tamarind
• 3-3 ½ tablespoons crumbled jaggery or sugar or adjust as per your taste
• 1 teaspoon roasted Cumin Powder
• 1 teaspoon Chaat Masala
• 2-3 cups of Water or add water as per the required consistency
• 1-1 ½ tablespoon Boondi
• Black Salt (kaala namak) as per the requirement

How To Prepare:
For Stuffing:
1. First of all, boil the potatoes until they are completely cooked.
2. Let them cool down and then peel them off.
3. Now, take a bowl and mix chopped onions, coriander leaves, cumin powder, chaat masala, black salt and potatoes.
4. Mash the potatoes to mix well with other ingredients and keep them aside.

For the Pani:
1. Pour all the ingredients mentioned above in the Pani section in a jar and blend together.
2. Now, add a little bit of water to blend into a fine chutney.
3. Then, empty it into a large bowl and add water as per your required consistency.
4. Mix well and check for the seasoning. (You can add green chutney, chaat masala or black salt as per the requirement)
5. Now add boondi into the Pani and refrigerate until chilled.

How to assemble Pani Puri:
1. Take a puri and crack open from the top, with the help of a spoon or your fingers.
2. Now add the potato-onion filling in it, as per your liking.
3. Then add the Pani into the Puri with a spoon, filling into the top.
4. Serve it immediately to avoid soggy Puris.

Note* You can also add boiled white chickpeas or Ragda to the filling.
