Fragrant rice spiced with whole spices as well as ground garam masala, this one is sure to tickle all your senses. This is a great way to make your simple meals special or you if you have leftover rice in the refrigerator then you can definitely use them to make this simple rice recipe. These go really well with dal fry and mild gravies. Here is a step by step recipe of the same.

Ingredients:

  • Rice- 1 ½ cup
  • Water- 4-5 cup
  • Salt- as per taste
  • For the tempering:
  • Ghee- 1 tbsp.
  • Salt- a pinch
  • Cumin seeds/jeera- 1 tsp.
  • Cinnamon- 2-inch stick
  • Black peppers- 7-8
  • Star anise- 1-2
  • Cloves/lavang- 4-5
  • Mace/javitri- 3-4 strands
  • Green cardamom- 4-5
  • Black cardamom- 1
  • Bay leaves- 2
  • Garam masala powder- 1 tsp.
  • Additional ingredients:
  • Ghee- 1 tbsp.
  • Onion- 1/3 cup (thinly sliced)
  • Coriander leaves- 1 tbsp.

Procedure:

  1.  Rinse the rice 2-3 times or until the water starts running clear.
  2.  Heat water in a pot and add some salt to it.
  3.  When the water starts to boil, add the rice.
  4.  Cook the rice for 15-20 minutes without the lid. once the rice is cooked, turn off the flame and drain the excess water from the rice and allow the rice to cool down.
  5.  Heat ghee in a small pan. Turn the flame to low and add all the whole spices.
  6.  Saute the spices in the ghee until aromatic.
  7.  Add a pinch of salt and the garam masala. Stir it well and add the tempering to the rice.
  8.  Put the pot of rice back on the flame and stir well.
  9.  Remove from the flame and fresh chopped coriander.
  10.  To prepare the garnish, heat oil in a small pan and fry the chopped onion until golden brown in colour.
  11.  Sprinkle the fried onion on the rice.
  12.  Serve the garam masala rice with your favourite curries, dal, etc.
