  • Salt- as per taste
  • Oil- for cooking + 2 tsp. (for adding to the dough)

  1.  Rinse the spinach really well under running water and get rid of the excess water.
  2.  Boil water in a pan and blanch the spinach leaves in it for 5-6 minutes.
  3.  Remove the leaves from the water and keep the spinach stock.
  4.  Put the cooked spinach in a blender and puree it.
  5.  In a large bowl, take the whole wheat flour, salt, asafoetida, green chillies and the oil. rub all the ingredients together.
  6.  Now add the spinach puree and mix again. Add the required amount of spinach stock to knead a soft dough.
  7.  Now take a small amount of dough and roll it between your palms to make a ball. Place the ball on the rolling surface and flatten with your fingers. Roll the dough into a 3-4 inch diameter circle, apply oil all over the top side of the disk and then fold it inti half. Again apply the oil on the semi-circle of the dough and then again fold it into half to make a triangle. Dust some flour on it and roll it to make a paratha.
  8.  Heat a tawa and place the paratha on it. Apply oil or ghee on the paratha and cook it on both the sides until it gets brown and crispy.
  9.  Serve the paratha hot with butter, yogurt or pickles.
