Nothing could be better than a hot bowl of soup on a chilly winter day. During winters one thing that I crave a lot is soups. Tomato, mushroom, hot and sour and manchow soup are my favourite ones. But since during winters, spinach is in the season I love to have spinach soup more often. We all know that green leafy vegetables are beneficial for our health. Thus, I try to incorporate it into my diet as much as I can.

Today I am going to share with you a very easy and healthy spinach soup recipe.

Ingredients:

  • Spinach- 2 cups
  • Onions- ¼ cup (chopped)
  • Garlic- 3 cloves (finely chopped)
  • Gram flour- 1 tbsp.
  • Cumin powder- ¼ tsp.
  • Bay leaf- 1
  • Water- 2 cups
  • Butter- 1 ½ tbsp.
  • Black pepper- as per taste
  • Salt- as per taste

Procedure:

  1.  Rinse the spinach leaves with water and chop them.
  2.  Heat butter in a saucepan and drop in the bay leaf. Sauté the bay leaf for 2-3 seconds.
  3.  Add the chopped garlic and sauté until the garlic is light brown in colour. Make sure not to burn the garlic. Keep the  flame on low while cooking the garlic.
  4.  Now add the chopped onions and fry until the onions are soft and translucent.
  5.  Add the chopped spinach, salt and pepper. Mix well.
  6.  Now add the gram flour and mix again.
  7.  Add 2 cups of water and allow the mixture to come to a boil. Let the mixture simmer for 3-4 minutes.
  8.  Now add the cumin powder and stir again. Turn off the flame.
  9.  Allow the mixture to cool down. Once the mixture has reached the room temperature, remove the bay leaf from the soup  mixture and then blend the mixture with a hand blender. Make sure that the soup has a very smooth consistency.
  10.  Taste the soup and add more seasoning if required.
  11.  If the soup is too thick add some water to get the desired consistency.
  12.  Put the soup back onto the stove and cook the soup for another 4-5 minute.
  13.  Serve the palak soup hot.
